In order to share my passion for organic, locally grown, fresh, seasonal and of course vegetarian/vegan food I offer our guests the possibility to dine here, in the summer months, at my table d'hôte, in the garden under the vast mulberry tree or by the field with grand vistas across the landscape, in the colder months in the rustic kitchen at my farmhouse table.
All the meals are prepared fresh and from scratch and include 3 courses plus local bio wine from our own wine cooperative in Quinson for which the grapes grow right behind La Vudèle, and the wine farmer is my neighbor Joel, his son Eric & his family!
Passionate about cooking Jim used to prepare elaborate meals for his friends in the Netherlands but has since included wine tasting to his portofolio. He will guide you through the various wines from Quinson, from the growing methods to the vinification process and the final and best part, the tasting.
Jim followed the invitation of the Université Européenne des Senteurs & des Saveursin Forcalquier to partake in a day-long discovery of local products, precious safflower and petit épeautre, both growing in the northern parts of Provence. He continues to explore the various aromas and flavors of this beautiful region and combines them in his cooking.
Inspiration comes from what nature has to offer us, respecting her cycle of growth, adding ideas and experiences from our travels to many interesting places. This includes essential oils, for example a superb lemon sorbet with lavender essential oil, shown in the photo on the bottom left. Food is not just about eating or the ingredients used but also the care and attention put into the preparation, the respect and kindness.

My offer changes according to the season and availability, allow yourself to be surprised! A lot of our recipes are vegan and/or "raw", like our delicious peanut butter for breakfast or our equally delicious chocolate mousse tart for dessert.
